This project consists of the use of UASB reactors in two phases, where one reactor is responsible for the acidogenic phase, while another reactor is in charge of the methanogenic phase, in order to produce a greater quantity of biogas as a by-product of the process and at the same time decrease the organic load that composes the residual water of study. This research was carried out by means of a synthetic water feed in the acidogenic reactor, with characteristics very similar to the wastewater of the non-alcoholic beverage industry, where its main carbon source was sucrose, which maintained a constant volumetric load of 11. (kg / m3.d-1), during the entire operation stage. One of the objectives in the methanogenic phase was to feed the methanogenic reactor with 100% of the effluent from the acidogenic phase, for which an acclimation was initially carried out in the bioreactor and in such a way as to obtain ideal conditions for the growth of the biomass, by means of a synthetic tributary. Inside the reactor, an inoculum was added to help start the reactor, this being a sludge from a methanogenic process within a dairy industry with an average total solids of 47027 (mg / L); Then a fixed bed composed of high density polyethylene rings was incorporated to avoid the dragging of the biomass. The operation of the reactor was established, during 5 different phases, in which the tributary began to be varied in different percentages, starting with 25%, later increasing to 50% and 75%, thus ending with a 100% feed. of water of the acidogenic effluent, in order to seek and evaluate the performance of the system in two phases of the Anaerobic digestion that was proposed for the treatment of wastewater from the soft drink industry, in addition, this project was made different measurements in which during the 202 days of operation of the system, it was obtained that in phase 2 a maximum COD removed with a value of 31% was presented, while the VOC of the system was higher in the fifth phase with a 8.8 kg / m3 * day, where the two reactors operate with a TDH of 8 hours and under a mesophilic temperature.
