There are many admixtures that can be applied to the mixtures to delay or accelerate the setting, being natural or synthetic products, which can be added to the cement paste, mortar or concrete, without affecting their characteristics, as long as the dosages are respected. This degree work is structured in four chapters. In the first chapter the elements of this work are stablish, starting from the background, together with the formulation of the problem and its respective substantiation, the objectives that are wanted to be reached and finally the definition of the basic terms treated in the present work. In the second chapter the elements that were used are established, being the mortars, the types of mortar, the properties that this presents being in a fresh and hardened state, the additives and the types of additives that can be used, being retardants and accelerators and natural additives, with an emphasis on sugar. With the third chapter we find the characterization of the materials, in which the composition of the Tequendama cement is described, its density, the specific surface it presents, the normal consistency of the cement paste, the setting time, the fluidity of the mortar and the resistance of it. At the same time, tests were carried out in sand of the Guamo, such as granulometry, density, unit mass and organic matter content, treating in the same chapter the additives used in the grade work, the Eucon R-200 being a commercial additive and Standard brown Riopaila sugar, the natural additive. In the fourth chapter the graphs are presented, and the results obtained in each of the tests executed on the pastes and mortars are analyzed, with or without the addition of sugar and Eucon R-200. Finally, the conclusions and recommendations that were reached can be found, looking the behavior of the cement pastes and mortars, which were used along this grade work by the author.
